Laos is a landlocked country bordered by China, Vietnam, Myanmar, Thailand and Cambodia. It has a large river system that injects the majority of water into the Mekong River. Essential Lao Ingredients
Garlic: Garlic is a popular flavour found in Lao cooking. There are several different varieties of garlic available here. One is a very small bulb that has small cloves covered in a pink skin. These are very strong and have a strong heat component. When used these are normally not peeled. There is also a bulb of garlic that does not have the cloves and these are a favourite as a pickled side dish to foods. All the recipes in this booklet of recipes we use the normal and best known garlic bulb with the large cloves. Instead of the fresh garlic you can use the crushed ginger purchased readily in supermarkets.
